The Renaissance Behind La Marzocco: The Story of Florence’s Legendary Lion

La Marzocco is probably one of the most recognizable espresso machine brands among coffee lovers. Many enthusiasts jokingly call it “La Ma” or “the Lion.” While most conversations about La Marzocco focus on its performance and its dominance in the commercial coffee industry, very few people talk about the true identity behind the lion in its logo. So today, let’s explore something a little different—the Renaissance hidden inside the world of espresso machines.

We all know that La Marzocco’s logo features a lion, a symbol that feels both mysterious and powerful. But it is far more than just a commercial emblem; it carries centuries of living history and cultural heritage. La Marzocco comes from Florence, the birthplace of the Renaissance and home to countless famous artists, architects, philosophers, and political figures. It is also one of the most iconic destinations travelers visit when they go to Italy. The city’s historic symbol is the “Marzocco,” which is the very name of the lion itself. To truly understand the La Marzocco brand, we may first need to begin with Renaissance-era Florence.

The name “Marzocco” is believed to originate from the Latin word “Mars,” the Roman god of war. Since Roman times, Florence had been regarded as a city under the protection of Mars, giving the lion strong associations with guardianship, victory, and strength. During the Middle Ages, lions were widely used as symbols of royalty and authority. The Republic of Florence chose the Marzocco lion to represent the supreme power of its people and their tradition of defending their homeland.

The version of the Marzocco lion most people recognize today largely comes from the famous sculpture created by Donatello, one of the greatest sculptors of the early Renaissance. His work marked the transition from medieval art into the new Renaissance era. Between 1418 and 1420, Donatello was commissioned by the Republic of Florence to create a stone lion sculpture in preparation for the visit of Pope Martin V. The statue was intended to decorate the staircase of the papal residence inside Santa Maria Novella. The lion stands in a solemn and commanding pose, with its right paw resting on a shield bearing Florence’s iconic lily emblem, eventually becoming one of the city’s most enduring symbols.

Today, the original sculpture is preserved in the Bargello National Museum, while the version displayed in Piazza della Signoria is a replica. Interestingly, Florence’s fascination with lions goes back even further. In the 14th century, the city reportedly kept more than thirty live lions on a single street, which eventually became known as “Lion Street.”

Fast forward to 1927, when brothers Giuseppe Bambi and Bruno Bambi founded their espresso machine company in Florence. They wanted a powerful symbol for their new brand, and ultimately chose the Marzocco lion, the symbol of their hometown. To them, the lion represented victory, conquest, resilience, and the determination to overcome challenges in the espresso machine industry. In many ways, they tied the destiny of the brand to the spirit and cultural legacy of Florence itself. Today, the La Marzocco lion is not only a tribute to the city’s glorious history, but also a symbol of the brand’s commitment to excellence, strength, and tradition.

If we look back at La Marzocco’s product design philosophy over the past few years, we can also see many subtle tributes to Florence and Tuscany. One design that left a strong impression on me was the limited-edition olive green La Marzocco Linea Mini released in 2021. Tuscany is often referred to as one of Italy’s most beautiful cultural regions, and Florence serves as its capital, famous for breathtaking landscapes and artistic heritage. When people think of Tuscany, they often picture olive groves and vineyards stretching across rolling hills. The color of this special Linea Mini was inspired by the olive fields surrounding Tuscany. Combined with gold accents and walnut wood customization, the machine carried a timeless vintage elegance.

But La Marzocco has never been a company that simply sells espresso machines. It has always been about building a culture people want to be part of. From 2000 to 2008, La Marzocco served as the official sponsor of the World Barista Championship, which further cemented its reputation in the specialty coffee industry. In recent years, as more coffee enthusiasts and espresso geeks have entered the scene, high-end home espresso machines have become increasingly popular among everyday consumers. Models like the La Marzocco Linea Mini and La Marzocco Linea Micra have allowed this legendary “lion” to step beyond cafés and into the coffee corners of ordinary homes.

SmartSteam Explained: How La Marzocco Linea PB Makes Perfect Milk Frothing Effortless

A while ago, I came across a photo online:

My first thought was—wait, is that a steam temperature probe attached? Instantly, it felt like there was a lot to unpack. Naturally, it also sparked my curiosity to learn more about this new product—both its functionality and the business value behind it. I have to say, even after all these years, La Marzocco still lives up to its reputation. At the core of this innovation is one of its key technologies: SmartSteam. Essentially, it combines a dual-boiler system with advanced PID temperature control, allowing users to enjoy powerful, dry, commercial-grade steam while maintaining the convenience and intelligent control expected from a home machine. It transforms milk frothing from a skill that requires practice into a much more accessible process—one that consistently delivers excellent results.

With SmartSteam, the feature can be integrated directly into the steam wand of the classic Linea PB. All you need to do is program your desired temperature in the menu, press the SmartSteam button on the machine, and start frothing as you normally would. The difference is that once the milk reaches the target temperature, the machine automatically reduces pressure to achieve perfectly textured milk at the ideal temperature.

If there’s one machine that truly represents La Marzocco as a brand, the Linea PB undoubtedly earns that title. It embodies exceptional performance, especially when it comes to maintaining consistency during continuous service—one of the key reasons why so many commercial cafés choose it. A machine that’s both durable and reliable like this is hard not to love. Designed and named by Piero Bambi, the Linea PB features La Marzocco’s signature polished stainless steel body, with clean lines and soft contours. It also comes equipped with a uniquely user-friendly interface that allows baristas to directly control boiler temperature, brewing volume, hot water dosing, automatic backflushing, and more. Altogether, it elevates performance, reliability, and craftsmanship to a whole new level—truly a testament to world-renowned Italian design.

Traditionally, when frothing milk, we tend to rely on the temperature we feel through the milk pitcher to judge whether it has reached the ideal point. This method requires experience and inevitably involves some degree of uncertainty. However, this accessory integrates a temperature sensor that detects exactly when the milk reaches the target temperature. This makes the process far more controllable, reduces variability, and significantly improves consistency—ultimately helping achieve better milk texture.

SmartSteam can be programmed directly through the Barista menu, allowing you to store multiple temperature settings (including two different temperatures and even a setting for baby milk). Once programmed, you can select the desired temperature by either briefly or continuously pressing the SmartSteam button. This accessory is compatible with all new Linea PB machines (note: it cannot be retrofitted onto older models). It simply adds a temperature sensor to the end of the traditional steam wand, while the barista continues to operate it as usual. The machine automatically reads and identifies the temperature, reduces pressure, and shuts off once the desired temperature is reached. In other words, the barista can focus entirely on the milk frothing process.

More importantly, SmartSteam is not just about temperature detection—it uses predictive algorithms to deliver precise milk temperature control. Once heating begins, the SmartSteam algorithm tracks how quickly the milk is heating and accurately predicts the exact moment it will reach the target temperature.

New Modbar Pour Over Head by La Marzocco – Automated Precision Brewing for Modern Coffee Bars

Among La Marzocco’s many coffee machine products, Modbar is undoubtedly one of the most distinctive. In fact, La Marzocco even created a dedicated Instagram account just for Modbar. In the bio, they describe themselves as: “The original undercounter espresso machine and coffee brewing manufacturer made in partnership with La Marzocco.”

There’s an important keyword here: coffee brewing.

From the very beginning, Modbar has focused on a minimalist undercounter design that supports both espresso and pour-over brewing. The goal is a clean, compact coffee bar that allows baristas to interact more easily with customers while fitting seamlessly into a wide range of interior environments.

Modbar is considered one of the most advanced coffee brewing systems in the world. In automatic curve mode, the Modbar pour-over module can store up to 15 different brewing profiles. Each profile allows full customization of water volume, brew temperature, extraction time, and even segmented pouring. This level of precision makes it possible to faithfully replicate ideal pour-over techniques, striking an effective balance between high quality and high efficiency—and ultimately achieving optimal brewing results.

Recently, I noticed that La Marzocco Modbar has launched a new pour-over head. Visually, it integrates much more smoothly with the espresso group head design, offering a modern look while maintaining solid technical performance and extraction precision. Previously, the Modbar tap still relied heavily on manual operation. The new version leans more toward an automatic drip-style approach, with three built-in drip modes that can be switched freely. It can also be combined with your existing Modbar espresso group head, making it easy to transition between espresso and pour-over brewing.

The built-in drip modes in the pour-over head ensure even water distribution across the coffee bed, while offering precise temperature control, programmable water volume, and adjustable drip rates. Having an automatic drip brewing head like this can significantly simplify workflow—especially during busy service hours—greatly improving efficiency and consistency.
This modular, expandable design also helps create a complete, integrated bar system. Mixing and matching Modbar components genuinely delivers flexibility, enhances the overall adaptability of the Modbar lineup, and meets the needs of different users.

At its core, the new Modbar pour-over module is still designed to integrate seamlessly with the entire Modbar ecosystem. One of the biggest advantages of this programmable automatic drip extraction method is precision. By combining accurate temperature control with repeatable, programmable parameters, baristas can reproduce the same extraction with the simple pull of a lever, ensuring stability and consistency in every cup.
At the same time, it helps maintain a clean, unified coffee bar aesthetic and supports an open, interactive bar layout—creating a more approachable in-store atmosphere. Personalizing the space and tailoring the customer experience is, after all, one of the original intentions behind undercounter coffee machine design.

The Modbar Pour-Over tap features a full-color display, allowing users to scroll through menus by turning a knob, switch between parameter modes, and start brewing by pressing the control lever. Modbar has also released an official comparison of parameters between the new Pour-Over system and the traditional tap, and the differences are quite significant.

So what do you think about this kind of automatic drip brewing equipment?
Would you be comfortable with a pour-over coffee brewed by an automated machine?
Let’s talk—I'd love to hear your thoughts on this new Modbar setup.
